Gluten Free Italian Meatloaves Recipe
My mother's recipe that is adapted as gluten free. Can also be made dairy free.

Soak breadcrumbs in milk until absorbed.
Finely chop green bell pepper and onion.
In a large bowl, add all remaining ingredients and mix well.
Add soaked breadcrumbs and mix well.
Shape into small loaves, approximately 4 ounces each.
Place on baking sheet covered with foil and sprayed with oil.
Top each loaf with some catsup, parmesan cheese, and basil.
Bake at 350 degrees for 45 minutes or until browned.
Can also be made into meatballs. Both meatloaves and meatballs freeze well.
