Gluten Free Gingerbread Muffins Recipe

Ingredients
  

  • 1/2 cup tapioca flour
  • 1/4 cup garbanzo flour
  • 3/4 cup Bob's Red Mill gluten-free all-purpose baking flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 teaspoon baking soda
  • 1/4 cup stevia
  • 1/4 cup ghee, melted
  • 1/2 cup molasses
  • 1 egg, well beaten
  • 1/4 cup hot water

Instructions
 

  • Sift together flours, spices and soda. Set aside.
  • Beat Stevia, Ghee, molasses and egg in large bowl.
  • Add dry ingredients, stir.
  • Add 1/4 c hot water and mix well.
  • Pour into lined muffin tins. Bake 20 to 25 minutes at 350.
