Now that we have all the ingredients ready, it’s time to assemble them and start cooking. Here is the step-by-step guide on how to make this creamy and delicious Vegetable Cheese Soup.

Ingredients:

  • 2 tablespoons of extra virgin olive oil
  • 1 large onion chopped
  • 3 celery ribs finely chopped
  • 2 cans of white beans drained and rinsed
  • 1 chicken breast cooked and shredded
  • 3 cups of homemade vegetable broth (you can use store-bought too)
  • 1 cup of heavy whipping cream
  • Sea salt and white pepper to taste
  • 6 oz gouda cheese grated
  • 6 oz havarti cheese grated

Instructions:

  1. Place a large pot over medium heat and add extra virgin olive oil.
  2. Once the oil is hot but not smoking, add the chopped onions to the pot and sauté for about 5 minutes, or until they turn tender.
  3. Add in the finely chopped celery ribs and continue to cook for another 3 minutes, until the celery softens up.
  4. Next, add in the drained white beans and shredded chicken to the pot.
  5. Pour in the homemade vegetable broth and bring everything to a boil.
  6. Reduce heat to low and allow the soup base to simmer for around 10 minutes.
  7. After that, using an immersion blender or transfer to a blender in batches, purees all ingredients until smooth.
  8. While the soup base simmers, prepare the cheese mixture by combining havarti cheese, gouda cheese, heavy whipping cream, sea salt, and white pepper together.
  9. Slowly whisk in the cheese mixture into simmering soup base until fully melted
  10. Continue to stir constantly till you’ve reached a creamy soup consistency.
  11. Season to adjust the taste further after the soup is finished.

Serving and Pairing:

Serve the soup hot, and garnish each bowl with a sprig of fresh parsley. It’s perfect for lunch or dinner, especially on a winter day when you need something cozy to warm you up.

Tips for Perfect Results:

  • Don’t rush melting the cheese into the soup base. Heat too high can cause the cheese to clump or curdle.
  • If you want a thinner consistency in your soup, add more vegetable broth until it reaches your ideal thickness.
  • To add extra flavor, use roasted chicken instead of boiled chicken.

Finally, sit back and enjoy your homemade Vegetable Cheese Soup knowing that it is gluten-free and dairy-free, perfect for those who have dietary restrictions or on a weight loss journey.

The best thing about cooking is that you can always experiment with different ingredients and flavors to make a recipe your own. In this vegetable cheese soup recipe, there are plenty of options for substitutions and variations to add variety to your meals.

First of all, if you are trying to stick to a dairy-free or vegan diet, you can easily substitute the cheese with nutritional yeast or a plant-based cheese alternative. You can also swap out the heavy whipping cream for coconut milk or another non-dairy alternative.

Another way to add some different flavors and textures to this soup is by changing up the vegetables. While this recipe calls for broccoli and white beans, you can substitute them with other vegetables that you love, such as carrots, zucchini, or spinach. You could also try adding in some diced potatoes for a heartier soup.

For those looking for a low-carb option, you can skip the beans and potatoes altogether and add in more leafy greens or cruciferous vegetables like cauliflower or brussels sprouts instead.

If you are a fan of spicy food, you can add some crushed red pepper flakes or diced jalapenos for some heat. Or if you want a milder flavor profile, omit the white pepper altogether.

Lastly, if you want to take this soup up a notch, try adding in some crumbled bacon or diced chicken breast for added protein and flavor. The possibilities are truly endless with this versatile vegetable cheese soup recipe.

Make-Ahead, Storing and Reheating

Making soup ahead of time can be a true life-saver when you’re busy or simply don’t want to cook. This vegetable cheese soup is perfect for making ahead because it can stay fresh in your refrigerator for up to four days.

To store the soup, first let it cool down and then transfer it into an airtight container. When you’re ready to reheat it, simply pour the soup into a saucepan and add some extra vegetable broth if it’s too thick. Heat on medium until the soup reaches your desired temperature.

If you’re looking to store the soup for even longer, you can follow the same steps as above and transfer it into an airtight container before freezing. This soup can freeze for up to three months without any issues.

When reheating the frozen soup, transfer the container from the freezer to the refrigerator overnight. When it’s time to enjoy, pour the thawed soup into a saucepan, heat on low-medium heat, and add some extra vegetable broth if needed.

Just like many other soups, this veggie cheese soup tastes even better the next day after all of the flavors have had some time to combine together. So take advantage of that fact and use this recipe to make your meal prep routine much easier!

Now that you have all the ingredients, it’s time to make sure your vegetable cheese soup is perfect. Here are some tips and tricks to follow for a creamy and delicious soup.

First, make sure to use fresh vegetables. You can even chop and prepare them ahead of time so they’re ready to go when you start cooking. Additionally, be sure to cook the vegetables until they’re tender before adding in the cheese and cream. This will ensure a smooth and creamy texture.

Second, use high-quality cheeses such as gouda and havarti. These cheeses will melt perfectly, creating a rich and flavorful soup base. Also, make sure to grate the cheese yourself instead of buying pre-grated cheese; this way you can control the size of the shreds and it will melt better.

Third, if you’re looking for a healthier or dairy-free option, try substituting the heavy whipping cream with nut milk or coconut milk. You can also use nutritional yeast as a dairy-free alternative for a cheesy flavor.

Fourth, when reheating leftover soup, add extra broth or water to thin it out as it may become too thick when refrigerated. And when serving, be sure to pair with crusty bread or crackers for added texture.

Finally, remember that seasonings are key! Don’t skip on the white pepper and sea salt to bring out the flavors of the vegetables and cheeses. Add them gradually throughout the cooking process until you achieve your desired taste.

By following these tips, your vegetable cheese soup will turn out perfect every time!
