Tips for Perfect Results

The perfect way to use up ripe bananas!
The perfect way to use up ripe bananas!

If you want to achieve the best possible results when making these chewy gluten-free banana biscuits, it is crucial to keep some essential tips in mind. Even though this recipe is quite simple and easy to follow, following these tips could help you create perfect biscuits every time.

Tip #1 – Use Ripe Bananas:

The first important tip is to use ripe bananas! Why? Ripe bananas are softer, sweeter and have a stronger banana flavor. They will also be easier to mash than green bananas, which makes them perfect for biscuit dough.

Tip #2 – Choose the Right Flour Blend:

When it comes to gluten-free baking, choosing the right flour blend is just as important as using ripe bananas. For this recipe, I suggest using a blend of 1 cup of gluten-free oat flour and 1 cup of tapioca flour. This blend provides the perfect balance of chewiness and crispiness.

Tip #3 – Measure Your Ingredients Carefully:

Measuring your ingredients accurately is essential to achieve perfect results when baking gluten-free biscuits. Inaccurate measurement can cause your biscuits to turn out too dry or too moist. Weighing your ingredients with a kitchen scale is more precise than using measuring cups.

Tip #4 – Use Xanthan Gum or Guar Gum:

Gluten acts as a binding agent in traditional wheat-based baking recipes. However, in this case where we are using gluten-free flours, we need xanthan gum or guar gum as a binder. They help hold the biscuit together and maintain structure when baking.

Tip #5 – Do Not Overmix the Dough:

Overmixing the dough can lead to dense or tough biscuits. To avoid this, just mix until the dough starts to come together. No need for excessive mixing!

By following these simple tips, you can make sure that each bite of your gluten-free banana biscuits will be perfectly crispy on the outside and perfectly chewy on the inside.

Chewy Gluten Free Banana Biscuits

Chewy Gluten Free Banana Biscuits Recipe

This is from the Gluten Free Club. The directions are for drop biscuits, but I'll bet they would work for cut out ones too. The original call for 1 C gluten free flour mix with a bit of chick pea flour thrown in. If you use my Recipe #391326, you won't need the chickpea flour, as there is an almond or bean flour (your choice) already in it. I used 3 T brown sugar. It holds together nicely and has a little bit of a chewy texture. Nice tooth feel. 🙂 I might try adding some melted butter instead of the milk next time. I forgot the xanthan gum and it still turned out great!
