Ingredients
  

  • 1 cup gluten-free oats
  • 1/2 cup butter or 1/2 cup margarine, melted
  • 1 cup gluten-free graham cracker crumbs

  • Grease a 13 x 9 pan and set aside.
  • Place oats in a bowl and toss with a 1/4 cup of the melted butter.
  • Spread the oats on a cookie sheet and toast in the oven for 10 - 15 minutes until golden.
  • Combine the toasted oats with the graham cracker crumbs, brown sugar and the remaining butter.
  • Press into the prepared pan.
  • Bake at 350°F for 10 minutes.
  • In a bowl combine the coconut, chopped red and green cherries and the white chocolate.
  • Spread the coconut mixture over the cookie base.
