Gluten Free White Chocolate Raisinets Recipe

I use Enjoy Life chocolate chips. For a nut free chip, you can also try Vermont Nut Free Chocolates. Earth Balance works for a dairy free option. Make sure the cookies are small. I use a small melon baller which I fill level. Bigger cookies will spread.

Ingredients
  

  • 1 cup rice flour
  • 1/2 cup tapioca flour
  • 1/2 cup potato starch
  • 1 cup brown sugar
  • 8 ounces butter
  • 1 cup chocolate chips
  • 1/2 cup white chocolate chunks
  • 1/2 cup raisins
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt

Instructions
 

  • Soften butter.
  • Cream butter, egg and sugar.
  • Add soda, salt and xanthan gum.
  • Mix in flour.
  • Add raisins, chocolate and white chocolate.
  • Drop by teaspoonfuls onto a greased cookie sheet.
  • Bake for 8 minutes at 350.
