Ingredients
  

  • 1 carrot, grated
  • 1 leek, trimmed and chopped finely
  • 2 teaspoons sesame seeds, toasted
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup almond meal
  • 3/4 cup cheddar cheese, grated
  • 3 eggs, beaten
  • 1 teaspoon dried parsley

Instructions
 

  • Fry onion until translucent.
  • Mix all ingredients and pour into lined loaf pan.
  • Bake at 180 C (350 F) for about 1/2 hour until skewer comes out clean.
  • Allow to cool in pan.
