Cocoa Crunch Cookies ( Gluten Free ) Recipe
A crunchy cookie that has cocoa with corn flakes crushed on the inside to make a good alternative to the regular cookie fare with gluten free ingredients.

Preheat oven to 375 degrees Fahrenheit
Line a large cookie sheet with parchment paper
Blend flour, gum, cinnamon, cocoa, b. powder and b. soda together in a small bowl. Set aside
In a large bowl mix butter and sugar together and form a smooth paste
Add eggs to butter/sugar mixture and beat with an electric mixer on medium speed until smooth and creamy
Put corn flakes in a large bag and crush lightly with a rolling pin before adding to butter/sugar mixture.
Stir in yogurt and combine all ingredients together well
Mix in dry ingredients blending everything with flour to make a soft ball of dough
Take small amounts of dough and roll it in your hand to make a ball.
Place balls 2 inches apart on cookie sheet and bake for 10 minutes until lightly browned
Remove from oven and place on wire rack to cool completely.
