Cocoa Crunch Cookies ( Gluten Free ) Recipe

A crunchy cookie that has cocoa with corn flakes crushed on the inside to make a good alternative to the regular cookie fare with gluten free ingredients.

Ingredients
  

  • 2 cups corn flakes, crushed
  • 1 cup brown rice flour
  • 1 cup gluten free blend flour
  • 3 tablespoons premium cocoa powder
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • 3 tablespoons yogurt

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit
  • Line a large cookie sheet with parchment paper
  • Blend flour, gum, cinnamon, cocoa, b. powder and b. soda together in a small bowl. Set aside
  • In a large bowl mix butter and sugar together and form a smooth paste
  • Add eggs to butter/sugar mixture and beat with an electric mixer on medium speed until smooth and creamy
  • Put corn flakes in a large bag and crush lightly with a rolling pin before adding to butter/sugar mixture.
  • Stir in yogurt and combine all ingredients together well
  • Mix in dry ingredients blending everything with flour to make a soft ball of dough
  • Take small amounts of dough and roll it in your hand to make a ball.
  • Place balls 2 inches apart on cookie sheet and bake for 10 minutes until lightly browned
  • Remove from oven and place on wire rack to cool completely.
