Ingredients
  

  • 1 1/2 cups gluten free bread mix
  • 1 tablespoon sugar
  • 1 egg
  • 3/4 cup milk
  • 1 tablespoon butter
  • 750 g cooking apples, peeled and sliced
  • 1/4 cup sugar, extra
  • 1/2 cup seeded raisins
  • 1 cup finely grated mild cheddar cheese
  • cream, for serving, if desired

Instructions
 

  • Place the bread mix and sugar in a bowl. Mix in the egg and milk lightly to make a dough. Stand mix for 10 minutes.
  • Melt butter in pan. Saute the apples in the butter until slightly softened but not completely cooked. Grease a 5 cup ovenproof dish with butter and place half the dough mixture in the dish. Sprinkle with half the prepared apples, extra sugar, cheese and all the raisins. Spread the remaining dough mixture on top. Sprinkle over remaining apple, sugar and cheese. Bake at 190oC for 30-35 minutes or until a skewer pierced through centre of pudding comes out clean.
  • Serve with cream, if desired.
