To make these gluten-free flax buttermilk waffles, you’ll need the following ingredients:

Dry Ingredients:

  • 2 cups gluten-free all-purpose flour (I recommend Bob’s Red Mill gluten-free flour)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup ground flax seeds (you can grind them yourself using a coffee grinder)
  • 1/4 cup oat flour (you can also make this at home by blending rolled oats in a food processor)

Wet Ingredients:

  • 2 eggs, beaten
  • 3 cups buttermilk (for a dairy-free or vegan option, use almond, soy or coconut milk mixed with apple cider vinegar to make your own “buttermilk”)
  • 1/4 cup melted butter (for a dairy-free or vegan option, use melted coconut oil or vegan butter)
  • 2 tablespoons honey or maple syrup (optional)

These ingredients will make about 8-10 waffles using a standard size waffle maker. The dry ingredients can be mixed together in advance and stored in an airtight container for up to one month.

The Recipe How-To

For this Gluten Free Flax Buttermilk Waffles Recipe, we will start by combining all the dry ingredients in a large mixing bowl. In a separate bowl, beat the eggs until they are fluffy, then add in the buttermilk and melted butter. Slowly add the wet mixture into the dry mixture and stir until well combined.

Adding the Ground Flax Seed

Add in the ground flaxseed to the batter and whisk it in thoroughly. For an egg-free version, you can replace the eggs with flax eggs, which are made by mixing 1 tablespoon of ground flax seeds with 3 tablespoons of water for each egg substitution.

Preparing the Waffle Maker

Preheat your waffle maker and grease it with some cooking spray or melted butter. Once hot, ladle in around ½ cup of batter onto each section of a Belgian waffle maker or less for smaller ones. Close the lid and let it bake for several minutes or until golden brown.

Serve Hot and Enjoy

Once cooked thoroughly, remove from heat, transfer to a plate, and serve hot! Top off your deliciously crisp and fluffy gluten-free waffles with your favorite fixings: maple syrup, butter, fresh berries, or whipped cream. Enjoy this healthy breakfast treat without sacrificing flavor.

Substitutions and Variations

One of the most exciting aspects of cooking is being able to switch up the ingredients and create something uniquely tailored to your tastes. With this Gluten-Free Flax Buttermilk Waffles recipe, there are many possible substitutions and variations that will allow you to explore new flavors and textures.

If you are looking for a different type of flour aside from gluten-free, you can try using oat flour, coconut flour or buckwheat flour. Oat flour is a great option for a heartier, more complex flavor, while coconut flour adds a slightly tropical taste. Buckwheat flour gives the waffles a nuttier taste with a bit of chewiness.

If you prefer not to use buttermilk, you can substitute it with homemade vegan buttermilk by mixing 1 cup of non-dairy milk with 1 tablespoon of either apple cider vinegar or lemon juice. Allow it to sit for 5 minutes before using it in the recipe.

For a vegan waffle batter, switch out the eggs for flax eggs by combining 2 tablespoons of ground flax seeds with 5 tablespoons of water. Let it sit for about 10 minutes until it becomes gelatinous. This works well as an egg replacement without sacrificing taste or texture.

If you want to add a fun twist on this recipe, consider making pumpkin spice waffles by adding half a cup of canned pumpkin and one teaspoon of pumpkin spice blend to the wet ingredients. You can also make oatmeal waffles by replacing half a cup of gluten-free flour with oats and adding in some chia seeds for extra crunchiness.

With these simple substitutions and variations, you can truly make this Gluten-Free Flax Buttermilk Waffles recipe your own. Get creative and enjoy exploring new flavors with ease!

To make these waffles ahead of time, simply prepare the batter as usual and store it in an airtight container in the refrigerator. You can keep the batter in the fridge for up to 2 days before using it. When you’re ready to cook the waffles, just plug your waffle maker in and start cooking!

To reheat your leftover waffles, simply pop them in the toaster or warm them up in the oven at 350°F for 5-10 minutes, or until they’re heated through. Just be careful not to overcook them, as this can make them dry and tough.

Now that you’ve gathered all the ingredients and followed the recipe closely, it’s time to delve into some tips that will help you achieve perfect results.

1. Preheat your waffle maker properly. It’s important to wait till your machine is thoroughly heated before starting to cook the waffles. This will help prevent sticking and ensure evenly cooked waffles.

2. Don’t overmix the batter. Overmixing can cause the waffles to turn out dense which is not our goal here. Mix the ingredients just enough so the wet and dry ingredients are well combined.

3. Let the batter rest for a while. Allowing the batter to rest for 5-10 minutes after mixing helps the ingredients integrate properly and ensures better texture once cooked.

4. Use non-stick spray or brush with butter/oil as needed to prevent sticking.

5. Don’t lift the lid too soon. This prematurely lowers the temperature inside of your waffle iron, leaving you with undercooked waffles.

6. Use a ladle to evenly distribute batter across the plates. Make sure not to use too much or too little batter otherwise they may not cook evenly.

7. Keep your oven warm at 200°F in case you need to keep your waffles warm before serving them all at once.

8. For added crispness, place your cooked waffles in a preheated oven directly on a rack for a couple of minutes until desired crispiness is achieved.

Use these tips as you prepare this recipe and you’re sure to end up with delightful gluten-free flax buttermilk waffles!

Gluten Free Flax Buttermilk Waffles Recipe

I already have a waffle recipe posted that we really enjoyed. However, since posting that recipe, I have discovered some additional allergies and can no longer use the baking mix. This is an adaptation of that recipe that I've come up with and these are a pretty good copy cat of recipe #149870. This recipe will serve 4 people (3 waffles each) when made in a standard waffle iron that makes 4 waffles at a time.
