Preheat the oven and prepare the baking sheet

Before starting with the recipe, preheat your oven to 400°F. While the oven heats up, line a baking sheet with parchment paper or use a silicone baking mat. This will ensure that the roasted chickpeas get crispy on the outside while remaining tender on the inside.

Prepare the Chickpeas

Start by rinsing and draining a can of chickpeas. You can also soak and cook dried chickpeas if you prefer. Pat them dry with a paper towel or kitchen towel to remove any excess moisture.

Season the Chickpeas

In a medium bowl, toss together the chickpeas with olive oil, honey, prepared mustard, curry powder, ground cinnamon, dried oregano and salt until they are well coated. Adjust the seasoning as per your preference.

Roast in the Oven

Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Bake them for 20-25 minutes or until golden brown and crunchy. Be sure to shake or toss them midway through cooking to ensure even crisping.

Let cool before serving

Once done, remove the roasted chickpeas from the oven and let them cool for a few minutes. They will be quite hot when they come out of the oven so be careful while handling. Serve immediately as a snack or store in an airtight container for up to one week.
