Healthy Gluten and Dairy Free Chocolate Chip Cookies/Bars Recipe
I make these as a substitute for the more expensive Cliff bar energy bars. They are not very sweet, but the taste is still satisfying and they provide long lasting energy as they have a very low glycemic index. My 4-year old loves them.
Mix all ingredients well. If mixture is too dry/clumpy add a little extra almond milk. Form into 1 inch balls, and press surface lightly with fork to flatten a little.
Cook at 350 for 14 to 16 minutes.
Cookies will not rise or enlarge much in size, and they will be dense - more like an energy bar consistency.
I've also made this as true bars - just press into a pan, bake about 20 min and cut into rectangles.
The recipe works fine with regular flour, and you may substitute any type of nut butter. We just happen to be a gluten-free household, and I like the flavor of the coconut flour in the cookies.
