Gluten Free Cranberry Bread with Butter Sauce: Ingredient List

  • 1 tsp Baking powder
  • 1 tsp Baking soda gluten-free
  • ½ teaspoon Salt

Wet Ingredients

  • 1 cup Granulated sugar
  • 2 eggs
  • 1 tablespoon Vanilla
  • 1 1/3 Cups Almond milk or milk of choice
  • 2 cups Fresh cranberries

Butter Sauce Recipe

  • 6 tablespoons of butter (room temperature)
  • ½ cup packed brown sugar
  • ¼ cup sweetened condensed milk
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water
  • 1 teaspoon vanilla

Note: You can use orange juice instead of almond milk for a Cranberry Orange Bread.

The Recipe How-To

“This bread is packed with juicy cranberries bursting with flavor!”

Preparing the Bread Batter

  1. Start by preheating your oven to 350°F/175°C and greasing a 9×5 inch loaf pan with cooking spray. I prefer to line my loaf pan with parchment paper to ensure the bread doesn’t stick.

  2. In a large mixing bowl, whisk together 2½ cups gluten-free baking mix, 1 tsp baking soda, ½ tsp salt and 1 cup granulated sugar until combined.

  3. In another mixing bowl, beat 1 egg and add 1 tablespoon cornstarch dissolved in ¼ cup cold water, then add ¾ cup almond milk, 6 tablespoons melted vegan butter or coconut oil, and 1 tsp vanilla extract. Whisk everything together until smooth.

  4. Fold the wet ingredients mixture into the dry ingredients mixture until smooth. It’s normal if it has some lumps.

  5. Now it’s time to add the star of this recipe! Add 1¼ cups fresh or frozen cranberries and fold them into the mixture gently with a spatula.

Baking the Bread

  1. Pour the batter into the lined loaf pan and tap it firmly on a surface several times to get rid of excess air bubbles.

  2. Bake for around 60-70 minutes, or until a toothpick inserted comes out clean with no wet batter clinging to it.

  3. Allow it to cool in the pan for around 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack before slicing.

Making The Butter Sauce

  1. While waiting for your bread to cool down, let’s start making the butter sauce! In a small pot over medium heat, combine ½ cup sweetened condensed milk, 3 tbsp unsalted vegan butter or regular butter, ¼ cup brown sugar, and 2 tbsp orange juice. Cook and stir until the mixture is smooth and starts bubbling around the edges.

  2. Remove from heat and let it cool for about 5-10 minutes until it thickens to your preferred consistency. Drizzle the butter sauce over each slice when serving.

Substitutions and Variations

“Enjoy this healthy treat as a dessert, snack or breakfast option.”

One of the beauties of this gluten-free cranberry bread recipe is that it’s incredibly versatile, so feel free to make a few substitutions based on personal preferences and dietary restrictions.

For those who are dairy-free, swap butter for vegan butter or coconut oil. Almond milk can be used in place of regular milk. You can also make this bread vegan by replacing the egg with a flax egg.

If you’re looking for a low-carb or keto option, you can use almond flour instead of all-purpose flour in equal measure. With this change, however, you may need to adjust the baking time slightly since almond flour tends to bake faster than all-purpose flour.

For a more nutritious and fiber-rich bread, you can add in some rolled oats to the batter. This cranberry oat bread is a delicious variation that pairs particularly well with coffee in the morning.

Another popular variation of this recipe is to add some orange zest to the batter. This citrusy twist brings out the flavors of the cranberries even more and results in a tangy and refreshing orange cranberry walnut bread.

You can also experiment with different types of nuts, like adding in some chopped walnuts or pecans to create a cranberry nut bread. Finally, don’t forget that this recipe also works well with dried cranberries if fresh ones aren’t available.

Whatever substitutions or variations you choose, always be sure to check that they are gluten-free and dairy-free if these dietary restrictions apply to you or your loved ones.

Serving and Pairing

“Drizzle on some homemade butter sauce for an extra touch of indulgence.”

There’s something truly magical about savoring a warm slice of gluten-free cranberry bread fresh from the oven – it makes your heart feel warm and your taste buds elated. This bread’s delicate texture and subtle sweetness pairs perfectly with a dollop of butter, honey, or even some cranberry sauce.

To up the decadence level, you can try my personal favorite – a generous drizzle of homemade butter sauce. The smooth and velvety texture complements the nutty flavor of the bread beautifully. Making it is surprisingly easy – mix sweetened condensed milk with butter, brown sugar, vanilla, and cornstarch in a pan over low-heat until it thickens to perfection.

If you’re feeling adventurous and would like to explore some unique flavor profiles, try serving this cranberry bread alongside some orange marmalade or orange glaze. The combination of the zesty orange flavor with the tartness of dried cranberries will make your taste buds sing with joy.

When it comes to pairing beverages with this delightful treat, there are several options that could work wonders. A cup of hot cocoa or tea would be perfect for those cozy winter evenings by the fire. For a refreshing summertime treat, try serving this bread with a glass of ice-cold almond milk or orange juice.

This gluten-free cranberry bread is versatile enough to be enjoyed at any time of the day! Have a slice for breakfast with your favorite hot beverage, savor it as an afternoon snack or pair it with some warm soup or salad for lunch – the possibilities are endless.

Make-Ahead, Storing and Reheating

“Say goodbye to the guilt and hello to the delicious taste of gluten-free baking.”

As with many baked goods, this gluten-free cranberry bread recipe can be made ahead of time to save you precious minutes on busy mornings. Simply bake the bread as directed in the recipe, allow it to cool completely, then wrap it tightly in plastic wrap or aluminum foil. The bread will keep at room temperature for up to three days.

If you’d like to store the bread for longer, it can be frozen. Wrap the cooled bread tightly and place it in an airtight freezer bag, removing as much air as possible before sealing. The bread can be frozen for up to three months.

When you’re ready to eat the cranberry bread, simply remove it from the freezer and let it thaw at room temperature. For a quicker thawing time, you can slice the bread before freezing so that it thaws faster.

To reheat the bread, simply place it in an oven preheated to 350°F (175°C) for 5-10 minutes until warmed through. Alternatively, slice the chilled or room temperature bread into thick slices and toast them in a toaster oven or regular toaster until golden brown.

As always, be sure to let the bread cool for a few minutes before slicing and serving. This delicious gluten-free cranberry bread is perfect any time of day, whether you’re enjoying it fresh out of the oven or reheating a slice from your freezer stash.

Tips for Perfect Results

“This recipe is the perfect way to use up any extra cranberries you have on hand.”

To ensure your gluten-free cranberry bread turns out perfectly every time, here are some helpful tips and tricks.

Firstly, make sure to use a good quality gluten-free flour blend. The wrong kind of flour can cause your bread to turn out too dense or crumbly. I recommend using a mixture of gluten-free flours, such as rice flour, tapioca flour, and potato starch.

It’s also important to whisk together all the dry ingredients thoroughly before adding the wet ingredients. This will help distribute everything evenly and prevent any clumps.

Another tip is to not overmix the batter. Gluten-free flour lacks the elasticity of wheat flour, so overmixing can result in a tough and chewy bread.

When baking your bread, it’s important to preheat your oven to 350°F and bake for around 50-60 minutes until a toothpick inserted into the center comes out clean. Don’t be tempted to open the oven door during baking – this could cause your bread to collapse.

Once your gluten-free cranberry bread is baked, allow it to cool completely before slicing. This will prevent it from falling apart or becoming too crumbly.

If you’re making the butter sauce, be sure to use butter that is at room temperature. This will allow it to mix smoothly with the other ingredients and create a glossy and delicious sauce.

By following these tips, you’ll be able to make a delicious and perfectly textured gluten-free cranberry bread every time. Enjoy!

Bottom Line

In conclusion, this gluten-free cranberry bread with butter sauce recipe is the perfect addition to any breakfast or holiday spread. The combination of sweet and tart cranberries with soft and fluffy bread, topped with a rich butter sauce, is sure to satisfy your taste buds. Not only is this recipe gluten-free and dairy-free, but it’s also versatile and can be adapted with substitutions and variations to fit different dietary needs.

By using high-quality ingredients such as fresh cranberries, almond milk, and a gluten-free flour blend, you’re giving your body the nourishment it needs while still indulging in a delicious treat. Plus, this recipe is easy to make ahead of time and store for later use.

So why not give this gluten-free cranberry bread with butter sauce recipe a try? Your taste buds will thank you. And if you have any leftover cranberries, try making cranberry sauce or adding them to oatmeal for a boost of flavor and nutrition. As a nutritionist, I believe in the power of food to nourish our bodies and minds, and this recipe is the perfect example of that. Happy baking!
