Step 1: Prepare the dough

  • In a large mixing bowl, whisk together the tapioca flour, flax seed meal, rolled oats, and salt until fully combined.
  • In a small saucepan or microwave-safe dish, melt the butter and honey together until fully combined. Set aside to cool.
  • In a separate mixing bowl, combine warm water with 2 teaspoons of active dry yeast and let rest for about 5 minutes until yeast has dissolved and mixture becomes slightly frothy.
  • Pour the melted butter/honey mixture into the bowl with the yeast mixture and whisk to combine.
  • Add 2 eggs to the wet ingredient mixture and whisk again.

Step 2: Mix in other ingredients

  • Add the dry tapioca/flaxseed/oat mixture slowly into the wet mixture while stirring with a wooden spoon until there are no lumps in the batter.
  • Add feta cheese crumbles and fresh or dried cranberries into the batter and mix well.

Step 3: Let it rise

  • For soft dough but still hold its shape preheat oven to 375°F (190°C) then turn off after preheating. Meanwhile, leave the dough covered in a warm place (75°F / 24°C) for about an hour or until doubled in size.

Step 4: Bake your bread

  • Grease a loaf pan with oil or butter then transfer your bread dough onto it. Sprinkle more crumbled feta cheese/cranberries on top for aesthetics or leave as is.
  • Bake your bread for around 40 minutes inside an oven that’s been preheated at 375°F (190°C). To see if it’s fully baked, stick a toothpick in the center of the bread, and if it comes out clean, then it’s done!

When it comes to this gluten-free cranberry feta cheese bread delight recipe, there are plenty of creative ways you can customize it to suit your preferences or dietary restrictions. Here are a few substitutions and variations to consider:

– Cheese swap: If feta cheese isn’t your thing, try substituting it with goat cheese or blue cheese for a tangy kick. You can also use dairy-free cheese if you’re vegan or lactose intolerant.

– Fruit swap: While dried cranberries are the star of this recipe, you can experiment with other types of dried fruit, such as cherries or apricots. Fresh cranberries or pomegranate seeds can also make a tasty and colorful addition.

– Flour swap: While tapioca flour is key in making this bread gluten-free, you could use all-purpose flour instead if you don’t have any specific dietary requirements.

– Nut swap: Rolled oats and flaxseed meal add a nutty flavor and texture to the bread, but you could use chopped walnuts or pecans instead for an extra crunch.

– Savory twist: If you prefer savory over sweet, try omitting the cranberries and honey and adding some fresh herbs such as rosemary or thyme to the dough. You could also add sun-dried tomatoes or olives for a Mediterranean-inspired flavor.

– Serving suggestions: The possibilities are endless when it comes to serving this bread delight! It makes for a great breakfast toast or brunch side dish, but it can also be sliced and turned into crostinis for an appetizer. You could even turn leftover slices into sandwich roll-ups with spinach, turkey, and cranberry cream cheese! And if you have any leftover cranberry sauce from Thanksgiving, spread that on top for an extra burst of flavor.

Serving and Pairing

A beautiful blend of sweet and savory flavors that are sure to delight your taste buds.
A beautiful blend of sweet and savory flavors that are sure to delight your taste buds.

Once you pull this gluten-free cranberry feta cheese bread delight recipe out of the oven, let it cool on a wire rack for at least 10-15 minutes to allow the flavors to fully develop. Then, slice it up and serve it warm with a dollop of your favorite honey butter spread. The rich and tangy flavor of the feta cheese pairs perfectly with the tartness of the cranberries and the nutty flavor from the flaxseed meal.

This bread can also be served as a side dish with soup or salad, especially if it’s a creamy soup like tomato bisque or a refreshing salad such as field green chicken cranberry salad. For a delicious appetizer or party food, slice the bread into small squares and top with cream cheese or goat cheese and dried cranberries, or use it as a base for gluten-free crostinis.

For those who have a sweet tooth, try pairing this bread with a slice of cranberry pear bread or enjoy it alongside some cranberry orange quinoa salad. You can even use this feta dough recipe to create savory roll-ups like spinach and feta pinwheels, or sweet cranberry cream cheese pinwheels.

Ultimately, this gluten-free cranberry feta cheese bread delight provides endless opportunities for creative pairings that can direct your taste buds on an exciting culinary adventure!

Make-Ahead, Storing and Reheating

A wonderful addition to any festive spread.
A wonderful addition to any festive spread.

As much as I enjoy making this gluten-free cranberry and feta cheese bread delight recipe, it is always great to have some leftover for future snacking or breakfast. Not only is it time-saving, but it also helps reduce food wastage.

To make ahead, simply prepare the recipe as described below until after the second rising period. Then, shape the dough into a loaf before wrapping it in cling film or in an air-tight container. Place it in the fridge to rise overnight or up to 24 hours.

When ready to bake, take the dough out of the fridge and allow it to reach room temperature. Preheat your oven as described in step 4 of the recipe and bake for 40 minutes until golden brown. Make sure you test for doneness by tapping on the bottom of your bread; if it sounds hollow, then it’s cooked through.

To store, wrap your completely cooled gluten-free cranberry bread in cling film and store it at room temperature for up to three days. If you need more storage time, you can refrigerate for up to one week.

When reheating leftovers, I prefer to do so in a toaster oven as opposed to a microwave since microwaving tends to dry out bread. Simply slice your bread into desired thickness and toast until heated through. You can also reheat your gluten-free cranberry bread delight recipe quickly in the microwave but don’t overdo it —I suggest doing 10-second intervals until heated through.

Remember that storing and reheating times may vary depending on temperatures and conditions in your area. However, when appropriately stored and reheated, this delicious gluten-free cranberry bread will still maintain its flavor and moisture even after several days. Enjoy!

To get the perfect texture and taste for this Cranberry Feta Cheese Bread Delight recipe, I have some tips that you can follow along.

Firstly, keep in mind to not over-mix the batter. Overmixing can cause gluten development that would result in a very dense and chewy texture. So, just mix until the ingredients are well combined.

Secondly, after combining all the ingredients, don’t forget to let the dough rest for at least an hour. This will help the dough develop its structure.

Thirdly, make sure to fluff and level each dry ingredient before measuring. This will ensure accuracy in measuring and prevent any mistakes that could affect the final product.

Fourthly, for extra flavor, add some fresh basil leaves into the batter. Its fragrance will be enough to boost the taste of your bread.

Fifthly, experiment with other types of cheeses such as goat cheese or blue cheese for variations in flavor. You can also try adding spinach or cottage cheese to your filling mixture.

Sixthly, if you prefer a sweeter version of this bread recipe, add more honey or cranberry sauce. The sweetness of these ingredients can complement well with the tangy flavor of feta cheese and cranberries.

Lastly, make sure to use a greased pan to prevent sticking and facilitate easy removal from the pan after baking. You can also use parchment paper for lining.

Follow these tips and you’ll surely get a delicious and baked-to-perfection Cranberry Feta Cheese Bread Delight that’s perfect for any occasion!
